I'm planning on making Risotto next weekend. Even got me the ideal Vialone Nano rice from Constantino's on Federal Hill during a visit to Providence, yesterday. But Mr. Peyton beat me to the punch and posted instructions on making Risotto that explains the process much better than I do.
